A healthier version of mashed potato. I tried this recipe on the weekend and it is DELICIOUS. It has the same smooth, soft texture as mashed potatoes but with a hint of sweetness, lower in calories and a lot healthier for you. I even have some for lunch today yummo.
- 1 head of cauliflower
- 2 tablespoons of coconut oil
- Salt & Pepper to taste
Wash and cut the cauliflower into florets. Then place it in a steamer or in a pot of boiling water and boil/steam for about 10minutes. It’s hard to overcook cauliflower so no need to be too precise with the time, just as long as the cauliflower is soft.
Then place the cooked cauliflower and the coconut oil in a food processor and process until smooth, until it looks like mashed potato.
Add salt and pepper and process once more until all combined. Serve Up.
