These beetroot chips have become almost a staple on our dinner table. They are quick, healthy and delicious. Try them as an afternoon snack or as a side to your next dinner. More often than not they are eaten before dinner even gets served...
- 2 x fresh beetroots
- Oil (ideally coconut oil but you can use olive oil)
Preheat your oven to 200°C. Cut the beetroot into thin slices and coat in oil and salt. Place on a baking tray (with baking paper on it) and place in the oven.
Once they start to crisp up turn them over. It takes about 30-40min but just depends on how thick you cut the chips and how crispy you like them.
I believe I won my man over with this recipe. He still raves on about how good they are and now makes them himself.
