Sweet Potato Brownie

These delicious sweet potato brownies have become quite a staple in our house. A perfect balance of protein, fat and carbs for hormone health. They are gluten and dairy free, high protein, low sugar and full of that gooey chocolate taste we all just love about brownies. They make a good mid morning snack or a healthy dessert warmed up and drizzled with berries.

Ingredients

  • 3 cups of grated sweet potato
  • 2 eggs
  • 2 egg whites
  • 1/3 cup coconut oil, melted
  • 1/3 cup rice malt syrup
  • 2 tsp baking powder
  • 1/2 cup cacao powder
  • 1 cup vanilla protein powder
  • 1 banana, mashed

Preheat oven to 180°C and line a loaf tin with baking paper.

Mix all the ingredients together in a large bowl. Once combined pour into the lined loaf tin. Bake for 30min. Allow to cool completely before removing from the tin.
